Pinoy Snack: Camote Cue

Oh my goodness, the soda is at the center! Are you on a diet? Then, this snack is not for you. Camotecue is a popular snack for Filipinos. Camotecue is made of sliced sweet potato, deep fried and coated with caramelized brown sugar. Best paired with Coke but, I ran out of Coca-Cola so; Mountain Dew is a good alternative for me.

Few months ago, my first Camotecue was soggy so; I found another strategy to cook it. I have to deep fry it first then, transferred to a pan. In medium heat, sprinkle the brown sugar to the cook sweet potato. Make sure that every sides are coated with caramelized brown sugar. It will look like this and will never get soggy.

Put 3 or 4 slices in a skewer or eat it as it is. Don't forget a glass of refreshing Coca-Cola is the best soda to pair for Camotecue. Let's chow!

Sweet Potato Casserole

Happy Thanksgiving! Is the turkey in the oven yet? Mine is not LOL. Actually, Hubby and I had our early thanksgiving dinner yesterday. Sister-in-law and her family from Mississippi were in Orlando for a short vacation and they came over for dinner. We had turkey, sweet potato casserole, rolls, savory stuffing, cranberry sauce, mashed potato, salads, corn, green peas, and ham. Today, we will have the leftover but, I will have a fresh turkey for tonight's dinner. Just for hubby and I. It will be my first time to cook a turkey. For now, here's a sweet potato casserole for you.

Here is the recipe that I used:

Have a great day and have fun with your family and friends on Thanksgiving.
