When I was growing up, I always visit my grandma. She loves to cook. I always dropped by her workplace after school. Her fettuccini with Alfredo sauce and croquetas de Pollo are my favorite food. She died when I was in College. When we visited Saint Petersburg and dine at the Columbia Restaurant at the Pier, I was amazed to see this:

When we dine in to a Spanish inspired restaurant in St. Petersburg, I was so amazed to see the croquetas in the menu as an appetizer. It brings back my childhood memories. While I watch her cooking, I was always there waiting to eat my share. Honestly, the croquetas of my granny is more tasty and juicy than this one. Their croquetas are dry and the ingredient seems lacking. Anyway, I asked my mom the ingredient of Croquetas de Pollo so I can make it homemade too.
